.......To the matter at hand. I love waffles, who doesn't love waffles? With all their waffly goodness... little square syrup receptacles, chewy on the inside, crisp on the outside... *makes drooly emoji face*... wafflllllleeeessss. Ok, ok, I'm calm enough to deal with this now... I think. I'll try. I woke up this morning thinking about waffles. Yes I sometimes wake up with food on my mind, or go to sleep thinking about food... probably dream about food... waddaya gonna do ey? A girl has to eat. Here's the thing, I actually woke up in a great mood, maybe it's this new Jr Gong album, maybe I've had a eureka moment, perhaps it's being out of the city and having nature at the doorstep...maybe a combination, but whatever it is, praises be. Somehow I remembered to take paper and pen to the kitchen with me... I actually wrote this recipe down as I went along. It may be tweaked in the future, but it turned out pretty good. It's not vegan, but you could easily sub the milk for something else, and add things to the batter. This could just be a basic batter that you jazz up as you see fit. So if you end up trying this out, please let me know. If you don't have access to a waffle maker, this would probably work for pancakes. This made me one waffle, and I'm full. GF Waffles Dry tings 3/4 cup GF flour blend (Y'all know I'm partial to Bob's) pinch of salt 1/2 tsp baking powder (make sure it's a GF baking powder) 2 tsp granulated sugar pinch of cinnamon Wet tings 1/2 cup and about 1 tbsp buttermilk (squeeze some lime or add some vinegar regular milk if you don't have BM) 1/8 cup olive oil (melted coconut oil if you have it) 1 egg white (flax or chai seeds can be subbed here) dash of vanilla extract Directions *mix the wet and dry ingredients separately then combine. *Let the batter stand for at least 5 minutes (max 15). If you find that it has gotten too thick, just add a bit more milk little by little until you get a consistency that you like. It should be somewhere between cake and pancake in consistency. *Cook via waffle maker instructions. simple, quick, and tahhh dahhh
