Mexican food...kinda

I've heard so many people say that they want to become vegetarians, but are afraid that food would be bland. I have never understood that concept. Think about it, so much of Indian cuisine is vegetarian, and we all love a good curry (well most of us) don't we?! It's not lacking in the flavour department. Neither is Mexican food. Just think about loaded veggie nachos... *Homer doughnut drool*

It’s difficult to function when you develop a food allergy later on in life, because you’ve already grown accustomed to certain tastes and foods, you already know what you like, and you have to retrain your taste buds to accept something else. But, it can be done. You can make gluten free/ vegan/ vegetarian etc etc etc, versions of anything, it just takes some skill, maneuvering and imagination.

I love Mexican food, the spice, the salt, the citrus, and the tequila. Ok, not so much the tequila, we had a slight falling out some years back and we haven’t made up yet. It’s a work in progress…not really, but don’t tell it that.

For people with a gluten intolerance/sensitivity/allergy (or well, people), there are corn tortillas, and GF wraps, you can make your own, or buy the ready-made versions. Finding the exact recipe that will work for your taste buds can be daunting, because you will most likely kiss a lot of frogs before finding your prince or princess.

Anyhoo, I was cooking some ground beef so that the carnivores could make tacos, and my belly decided it needed Mexican type food too. I swear my belly is “follow fashion” (it’s a thing we say in SVG, it means to do what your see others doing). I had some of black bean burger mix in the freezer and roasted veggies from an earlier meal. It was that simple. I thawed the black beans and “re-fried” them with taco seasoning, toasted the corn tortillas in the oven, then topped them with the black beans and veggies and some cheese, popped another tortilla on top and popped it under the broiler until it was brown and toasty.

Cooking tends to go a whole lot smoother for me when I prep, so I try to do that as much as possible. However, random commands from the follow fashion belly sometimes come along and I just wing it. Winging it can go really wrong, but sometimes I end up with something I would definitely make again…the quesadillas things I ended up with, are an example of the winging it gone right.
