![]() I like cauliflower because it's really versatile, you can use it in place of meat in many applications. I was wondering what to have for lunch today, then I remembered I had some cauliflower, and here endeth the reading. I usually make jerk cauliflower, but I wasn't feeling that today. I haven't had tacos in a little while, and I forgot to put black beans to soak, and couldn't be bothered with all the time they would take to cook from dry. Cauliflower to the rescue. I'm not great with ready made seasonings, whatever caking ingredient is put in them, doesn't agree with my system. It's simpler than you'd think to make your own combinations, and you probably have most of the ingredients in your kitchen already. Basic taco seasoning consists of smoked paprika, black pepper, salt, cumin, garlic, onion and chilli powders. I tend to season up vegetables like most people season meat. Well depending on the vegetable. I don't have onion and garlic powder, but I have green seasoning, which has garlic and onion... I know, I made it. lol. So tossed the cauliflower in green seasoning, then the ground spices, salt and pepper, and let it marinate for a half hour. Popped it in the oven until the cauliflower was fork tender then assembled the tacos. Put whatever you want in tacos, call the wraps if you feel like you're betraying the essence of tacos. I put pickled cabbage, fried ( a little over ripe) plantain, tomatoes, avocado, and some chopped coriander on mine, along with the cauliflower and crumbled tortilla chips for crunch. At the last minute I drizzled a little bit of a spicy tomato sauce, but sour cream, or a cilantro sauce would work, also squeeze some fresh lime on there, trust me. ** heat soft corn tortillas in a hot pan on the stove, on both sides. No oil needed. The slight char makes all the difference. I was doing laundry while the cauliflower was baking.. YOU HAVE TIME TO COOK. :)
