Chinese food...

A few days ago, someone asked how they could fix a Chinese food craving while Gluten Free.

I don't deprive myself of any food I want. You just have to figure out a way around it. Thankfully, most companies are up to di time, they understand that the GF market, is huge and they stand to make lots of money off the people who need or want to eat that way.

Maybe your neighbourhood takeout place or restaurant doesn't have GF options, but you can make many of the dishes yourself. I promise they won't take a big chunk of time out of your life.

Rice Noodles: gluten free, tasty, don't take a whole lot of time to cook, and they go a long way, portion wise. Soak them in cold water then cook them for about 5 minutes..the package will have the instructions. They come in a variety of types, the two most common that I've seen are pad thai noodles, (look like steam rolled spaghetti, or linguini) and the really fine noodles that you'd use in pho (that beautiful Vietnamese soup).

Soy Sauce: I'm not sure how many companies make a GF version, but so far I've not had an issue with the offering from La Choy , but I err on the side of caution and never use a whole lot.. So that's your stir fries, and marinades right there.

I am a HUGE fan of sweet and sour sauce. You can make this yourself in no time. If you don't have pineapple, use another fruit juice...maybe passionfruit? I'm just saying, don't limit yourself. You can make a General Tso's sauce easily too.  As for the frying of the chicken, or fish, use a GF flour blend, oat flour or cornmeal. Sweet and sour cauliflower is delicious, and a good texture once you don't over cook it.

Most any recipe an be adapted, you just have to get a little creative, don't be boxed in by what you're used to. I've made barbecue sauce with guava, and with tamarind, whatever is in season is there for the taking. I suppose you could use guava in a sweet and sour sauce.. I tend to eat them before I can do anything other than make jelly.

Another reason to make it yourself, is that you control what goes into the dish, so you get exactly what you want.
