When I'm home alone, I end up concocting food type things. Today was no different.
I had soft corn tortillas and veggies, my first thought was to make tacos, but then I remembered I also had salsa and cheese... \0/ (that's my symbol for raaaaaeeee- hands in the air ting nuh). I sautéed onions and sweet peppers in some olive oil, added shredded kale (cut the stems out, roll the leaves up and cut it into thin strips), carrots and mushrooms, along with seasoning and spices. When the kale wilted, added some salsa (to taste) and cooked down. Pre heated the oven, I don't know to what, I just put it on, covered the bottom of a oven proof dish with the tortilla, spread the filling, place tortillas to cover, spooned on some salsa and grated cheese. Stuck it in the oven and let it be.
I really wasn't sure what I was going to cook, most times this isn't something I know until I see the ingredients, or halfway through cooking one thing, it becomes something else. The case with the fried potatoes. I was initially going to make mashed potatoes and stir fried veggies... yep we see how far removed I got from that right. That's how I work, unless I really make a set menu, food is what it is, don't get stuck in a process and frustrate yourself if something goes wrong. It's food, have fun wth it.
oh right, the potatoes. they had boiled by the time I decided on the enchilada thing, so I cut them up seasoned them and fried them. Simple as that. Skin on.
