Sugar Cookies

​The holiday season is upon us. The season of people getting anxious because they have to feed that gluten free/vegetarian/vegan family member is upon us. Tis the season of the "alternate food choices" people being anxious because they have to go to a family food gathering, and be bombarded with "what do you eat?" "oh I forgot you can't eat*insert food here*" etc etc etc.. But it's not all the drama you think.

My sister thinks I have OCD. Not Adrian Monk over here but I can be "particular". I am by no means downplaying and making light of OCD. 

My compulsion  (I can be off centre if things aren't in the right place but I'm not getting into that today) is more like, if I read a book, and really like it, I'll hunt down everything by the author and read the list.... in order. I may not read anything else until I finish all the works from 1st to last.
If I decide I want to try a specific craft... that's the only thing I'll do until whatever in me that felt the need to do it, is satisfied.

And so we come to me watching all those Holiday "wars" on The Food Network, and deciding that I need to make and decorate sugar cookies.
​I have never in my life made sugar cookies...I have never in my life made royal icing, but here we are. There are great gluten free sugar cookie recipes all over the internet. I was worried because I thought the dough wouldn't roll out, but chilling it is essential. I chilled the dough, then I rolled it out, cut cookies out, chilled those cookies then baked them from chilled. It worked a treat. They didn't spread at all in the oven, I didn't roll them out evenly and the oven doesn't heat evenly, so some browned at the edges, but they were yummy.

​I don't have piping bags, but I had this injector looking pen thing I got from Marshall's for $2.99. Clearly my icing skills leave a lot to be desired. Ree Drummond won't be giving me awards any time soon, but this is only the beginning.
​Also, don't make royal icing by hand.. it's a lot of whipping egg whites. I'm going to experiment, but I think I can make royal icing vegan by using Aquafaba. 
Here's a picture of my cookies, I'll update on social media, when I make another batch, that look better. But you can have cookies, yummy cookies. No one need be left out.
