Candied Plantains

Candied plantain, I hear you, plantains are already sweet. By the way, let's deal with this upfront, Plan-Tin not Plant-Ain. 
Ok great, moving on,


A few people have requested my recipe for candied plantains.. as you guys should know by now, that's sketchy. I've seen some recipes online though, most call for really ripe plantains. If I have really ripe plantains, I'm making fritters, but that's for another time.
I really don't like fully ripened anything, well a few things, like pineapples (which you can also candy and put on icecream if you wish) and watermelon, but you're not here for that. Back to the plantains.


If you say you're West Indian, and can fry a batch of plantain, and the end result is the same number of slices you started with... I will have trust issues. I mean, who doesn't teif (steal) from the pan? Who? Sociopaths that's who, You are Hannibal Lecter as far as I'm concerned, and I'l be notifying the BAU of your presence on this green and blue earth of ours. 

So on to the food.
I made this with one half ripe plantain,  which I grilled with a little bit of butter (on the stove). When they were almost done (you don't have to grill them, I just wanted to be fancy,  leave them alone for a while, or the grill marks won't exist) I threw some butter (you can make this vegan with a butter sub), brown sugar, and honey in another pan and let that get melty and gooey.

​ I could have used the same pan, but apparently I needed to be fancy with the grill marks. When that mixture melted, I added cinnamon, nutmeg and sliced fresh ginger. I use the fresh ginger because it also caramelises during the process and I just like the taste. You then dump the plantains in, making sure they all have space on the bottom. When the mixture is bubbling around the edges , turn them on the other side, and let it reduce so you have more of a sticky sheen on them rather than a caramel soup. 
That's all there is to it.

You can add rum to this, but I had no rum. What kind of West Indian has no rum you ask? One who drank it all I answer. 
Now you have a sticky pot, a little water and dish washing liquid, and leave it on the fire for no more than a minute, that should get rid of the sugary mess.
