I like rice and peas just as much as anyone, you can make it with all kinds of legumes really, but sometimes, you want something a little bit different.
You can switch up your rice and peas by making a casserole or a bake. I found this recipe on Pinterest. I see recipes as more of a reference and inspiration, rather than something I need to follow to the letter. *does heavy metal head bang* cause, I'm a rebel and such. One day I will start writing things down... not today though. Now I didn't have all them sumn dey, (I didn't have the required ingredients)so I took in the basics and went about my merry way.
This is a really easy thing that you can do and shove into the oven and forget about for a while. It's easy, like no assembly required easy. you basically put everything into the baking dish, mix it up and then shove it into the oven. The possibilities flavour-wise are many. Are it vegan by omitting the cheese or adding cashew/vegan cheese
The recipe I linked was for a "Southwestern" bake, you could go easily switch it up with say, jalapeños, black beans, corn, and make it more on the Mexican side. Im gonna go ahead and say you could probably cut up chicken and put it in there or browned off ground beef, I mean it's really up to you. But it's something different, and it's filling. I have made stock before, it has it's purpose, but I just added water and some tomato sauce and seasonings, enough to just cover all the ingredients and thats it.
It will come out in "slices", if unlike me you aren't hungry belly and have no patience for that sort of thing.
