One of the things I miss most from my past Gluten filled life, is Roti.
I haven't had an actual roti in years, no dhalpourie, no paratha, no buss up shut, doubles... no nothing. I don't talk about it, it's really too painful.
I've made many unsuccessful attempts to make roti... smdh. A few weeks ago, I was made hip to ( do the young folks still use that phrase? Don't answer that) mashed potato flatbread.. Yep that's what I said, you read that right, mashed potatoes. The recipe is simple, a 1:1 ratio of mashed potato and flour. For you normies, use as is, I've found that with my GF flour, it works better when I add some tapioca starch into the mix to aid with elasticity. I use one tablespoon to every one cup measure. So 1 tbsp added to the one cup of flour, one cup of mash.
I also found that using tapioca starch on the rolling pin, bottle, whatever, works better than flour, because for me, the flatbreads come out better when the mixture has a bit of moisture to it, and adding more flour can dry it out. Alternatively you can just roll it out between sheets of parchment/wax paper. I try to get it as thin as possible, then it's just to transfer it to a hot pan, no oil, and let the magic happen.
Eat them asap, so if you're making just for yourself, don't go crazy and make like a 5 cup mix. lol. The pictures in this post are of a 1/2 cup ( so one cup in all. 1/2 of mash 1/2 of flour) mix.
I plan to try stuffing the next batch with dhal and seeing how it goes. Is it roti? no not exactly, but it's the closest I've come in years, in taste and texture, that'll do for the time being.
