![]() I'm not big on Thanksgiving, I'm pretty much here for the food... and the thought of that sweet potato casserole with marshmallows on top, strikes fear into the very depths of my stomach. To be honest I didn't even realise when Thanksgiving was this year, I literally thought it was next week. I popped into the supermarket yesterday and people were running around like headless chickens...I suppose turkeys ... anyhoo sweet potatoes were on sale so I picked some up and figured I'd just roast them. But see, that's how I know I am not in control, clearly my stomach and brain had some other idea and I ended up with sweet potato gnocchi. Gnocchi are like little pillows of yum. It's pasta of some sort, and its really not hard to make, it just sounds fancy and fussy. It's a ratio of 1:1/2. So if you have one cup of mashed potato, you need a half cup of flour. The trick is, not to knead it. Just combine the two ingredients, LIGHTLY flour your hands or the board, I cannot stress that enough. If you over flour it, the texture will be off. You just divide the little ball of dough into two ( I only used a half cup of mashed potato and quarter cup of flour) and roll each of those out into cylinders. Cut those into bite sized pieces, either press lightly with a fork or roll the fork tines onto it, just to get the little indentations. I made them too big and ended up resizing in hands. Then you put them in salted boiling water and wait until they float to the top, take them out, let them drain and toss in whatever sauce you like. I made a spinach sauce and tossed the gnocchi in at the end. I added dried thyme into the mix. But feel free to add whatever spice you like, some fried sage might be beautiful with it, even orange zest. Just experiment with the flavours you like.
