Baked Beans

I don't know if it's Boston or London, but I love Baked Beans for some reason. While it's easy enough to find Vegetarian beans or pork and beans if you so wish, I always end up modifying it. So why not cut out the middle man and make your own batch. It doesn't require a lot of ingredients, and you can spice it to suit your tastebuds, and control the amount of sodium, and hey, you'll know for sure exactly what's in it.

If (unlike me) you're smart, you'll probably use a pressure cooker (cook the beans at least half done before adding them to your stuff, or your stuff to them)  unless you want to be babying a pot on the stove all day and using up your gas or electricity. I'm assuming a slow cooker would work, but don't quote me on that, the last time I used a slow cooker, I was making roast beef for Sunday lunch over a decade ago. If you know how to use one, go right ahead. If like me, you soak your beans, please don't be like me and soak them an hour before you cook them, let them sit over night at least, or hell just buy a can of beans. Pinto beans can be stubborn. Any white bean should work for baked beans by the way. 


I like my beans a bit on the sweet and spicy side. I'm pretty sure there are loads of recipes out there. 
I used
brown sugar
ACV (apple cider vinegar)
​tomato sauce
cayenne pepper
salt
black pepper
smoked paprika
corriander
onions and garlic
spring onion (scallion) you can use chive

Basically, you sweat the onions and garlic in some oil, add all your powdered spices, when it gets all fragrant and delicious, add the beans, ACV, brown sugar, salt and water to cover and just a bit more. let it cook, and check on it.
